Homemade soup is always the same: nutritious, satisfying comfort food that is easily prepared, easily digested, economical, and bursting with flavour. There are few things in life as comforting as soup, and it always feels good to ladle soup into a bowl for someone... One thing that amazes me about soup is that it is absolutely brimming with essential vitamins and minerals. Soup is a delicious meal that will make you feel great—eating well is one of the greatest pleasures you can give yourself.

It's ok!

The best thing about this recipe book is how healthy and reasonable the recipes are. My husband gave this book to me for Christmas, and I decided to try out every single recipe in the book (a la Julie and Julia). About ten months in and I've made in the neighborhood of about 20 soups. Favorites are the Arfican Chicken and Peanut Soup (which is truly a meal in its own right), Broccoli with Cheese soup and Carrot Ginger soup. My husband absolutely loved the Stracciatella, and I've also had some rave reviews of my Curried Cauliflower. However, I do have to report that I've been disappointed with a number of the soups I've made from this book due to plain and simple lack of flavor development. The fact is that most of the recipes call for softening onions, adding the balance of ingredients with stock and letting it boil for a while-- this is even true for the French Onion recipe, which seriously undermined the credibility of the author to me. For most recipes, I end up adding about twice the amount of seasonings called for (and usually some of my own), otherwise I would describe them as pretty bland. All the same, I'll continue to cook through this book, and I have found a few real winners that I will definitely make again and again and again.

Always good to have more soup recipes!

The recipes in this book are deliciously easy to make. My husband and I eat a lot of soup because it's easy to make and is packed full of vegetables. I make one pot on Sunday and we have left overs for lunch in the week. This and the counterpart, For the Love of Salad, are two must haves for any cook. I also like the Moosewood cookbooks. I find that my family eats more vegetables when I mix it up.

This will become a favorite of yours (or a great gift to give)

Simple and wholesome are the two words I'd use to best describe this lovely national bestseller. You know how you buy a cookbook and often the ingredients are not typical things in your fridge or pantry? Or the steps seem really complicated? Even worse yet, you like only a few of the recipes throughout the entire book? You won't have that experience with this wonderful addition to your kitchen. Some of the lovely recipes you'll find here:
*Bean & Barley
*Butternut Squash & Apple
*Golden Vegetable
*Roasted Celery Root (to die for)
*Chunky Lentil

There is nothing wild or exotic here and I say that lovingly. The only downside for me personally is the section on poultry & meat soups, but some can be amended to accomodate a vegetarian diet. Further, many of the veggie soups can be amended to vegan by swapping out the butter for Earth Balance or olive oil as well. There is even a section on creating your own stock. It quite literally is one of my favorite cookbooks and I wish I found it sooner!

I have purchased a total of four copies of this book now because it makes such a wonderful gift. I put it in a gift basket with a fresh herb (or herb growing kit) and soup crocks.

If you need a good comfort food, this really is a must-have. If you are reading this in the midst of warm weather, don't worry! There is even a section on cold soups. When summer hits, Chilled Strawberry Soup you are mine.
